Cowboy Caviar



Today I had a lovely walk with a friend. We started here at my house (JUST KIDDING! Can you believe this HUGE estate?) You know better. We have a normal size house. Anyway, we walk this path often and enjoy the beauty, so here are some pictures to give you an idea of a place that is sort of the country in suburbia.


Do you see why this is such a nice place to walk? It's just a five minute drive from our house. Today there were all kinds of serious runners and bikers out on the path saying to us, "Left! Left!" and we just kept tootling along. We DID get out of their way of course, because it wouldn't be NICE not to move.

My friend and I joke about this house. We say, "Oh, there's my house!" If you have an extra three million dollars, it's yours!

There are so many trees trying to block the view of the mountains. Isn't the sky inviting today?


We begin and end here. It's a little horse outbuilding. The Highline Canal is a perfect setting for a fun, rich walk with a friend!

I DO live in Colorado, but I'm not around cowboys much. The only time I see cowboy boots is when I go to the airport. Texas is the real cowboy land (hi, G! hi SKW!) but we still have some Old West influence and ways. That's why I have a yummy recipe for you today called Cowboy Caviar: Ingredients: 1 chopped up jalapeno (or 8 slices, chopped up) 1 med. can diced tomatoes (and the juice) 1 can corn (plus 1/2 the juice) 1 can black beans (plus 1/2 the juice) 1/2 red onion (chopped) 3 tblsp olive oil 2 tblsp lime juice 1/2 cup chopped fresh cilantro. Mix it up in a big bowl and let it sit in the refrigerator for a few hours. Serve with corn chips (Frito's Scoops are good). Prepare yourself for many "this is delicious" and "can I have the recipe" comments!

MouthWaterN Good CowboyCaviar! I just got back from the store with jalapenos...none in the garden this year. I'll probably have to put in TWO...all my HotStuffers like it HOT...cept me...I like yours! Enjoyed the walk, too. Thanks, but no Thanks on the Mansion...I'm downsizing....my husbands stuff. LOL!!
